Refinement in steel containers for 4-5 months "sur lies" and subsequent aging in bottle for at least 2-3 months. Straw yellow color with evident greenish reflections, on the nose it offers very fine notes of citrus fruit that recall the flower of orange blossom. Fresh, savory, and mineral, it is excellent with shellfish appetizers, seafood, and fried fish.

WINEMAKING AND AGING

Winemaking: Very gentle pressing with a membrane press, subsequent static clarification of the musts and fermentation at controlled temperature between 14-16°C in steel containers

Alcohol content: 12.5%

SENSORY ANALYSIS

Visual: Straw yellow with evident greenish reflections
Olfactory: Inzolia as the oldest Sicilian grape variety with white orange blossom. Very fine notes of citrus fruit that recall the flower
Taste: Fresh, savory, and mineral, it is certainly among the main indigenous Sicilian varieties.
Pairing: Excellent with shellfish appetizers, seafood, and fried fish
