The grapes are harvested when ripe,destemmed, crushed and then fermented for 6 to 12 days. The fermentation temperature is kept below 32°C and the wine is gently pressed. Lastly the wine is racked, filtered and bottled.

Organoleptic characteristics

Ruby red colour with purple highlights
Powerful and spicy nose with red fruit and bell pepper notes.
A palate with smooth tannins and beautilful structure, Wonderfully complex, its structure is underpinned by flavours of stewed fruits, spices and hints of menthol, typical of these grapes.
