Winemaking
Manual harvesting of the bunches in the second decade of September. Drying in the fruit room for about 100 days, with a weight loss of 40%. Destemming and gentle pressing of the grapes followed by fermentation in stainless steel tanks at a controlled temperature between 15°-20°C. 25 days of fermentation with periodic daily pump-overs. 24 months in French oak barriques and tonneaux and 6 months in the bottle.
Sensory characteristics
Dark and brilliant garnet red. On the nose, a complex and sumptuous bouquet. The pleasant initial nuances of sour cherry and jam are then enveloped by spices and a delicate leather finish. Full, enveloping, strong, and refined at the same time, with a long and balanced finish.
