Born from the limestone soils of the Santo Menna vineyard, SALITANO is our tribute to the harsh elegance of Sicilian nature. It speaks with minerality, whispers citrus, and finishes with a hint of brininess — like a breeze coming from the sea. It is not just a wine: it is a breath among the wild vines, a story of resilience.
SOIL: Altitude from 390 to 410 m a.s.l.; the slope of this vineyard is 14% hilltop topography; clayey soils rich in nutrients (potassium, magnesium, calcium, iron, manganese). Mild and humid winters; dry and ventilated summers with strong temperature variations between day and night.
VINTAGE: The 2024 vintage was balanced, with a dry spring and regular flowering, followed by a warm but not extreme summer. The temperature variations in July and August favored aromatic concentration and freshness of the grapes.
WINEMAKING: The grapes are crushed no later than 3 hours after harvesting and begin to ferment in steel silos. Fermentation takes place in stainless steel tanks. Once winemaking is complete, the wine is aged "sur lie" for three months to add further consistency and complexity before being bottled.

TASTING NOTES: Straw yellow with greenish reflections. The aromatic profile is fresh and direct: lime, grapefruit, wild fennel, and broom. On the palate, it is tense, salty, very vertical, with a long and citrusy finish. Excellent correspondence between nose and palate.
