Gino Sorbillo belongs to one of the oldest families of pizza makers in Napoli.
His grandparents, Luigi Sorbillo and Carolina Esposito, founded the first pizzeria in 1935 on Via dei Tribunali, defined by many as the “Street of Neapolitan Pizza” in the ancient center of the city.
The Sorbillo couple had 21 children, all of whom became pizza makers.
Gino's father, Salvatore, is the nineteenth of the twenty-one children. Gino grows up in the family pizzeria and soon learns the secrets of the true Neapolitan pizza which he loves to specify as “the one from the poor alleys of the city,” meaning larger, generous, and accessible to everyone.
Soon, Gino manifests his style and his mark; the family trade combined with his distinct and natural artistic flair allows him to communicate through his creations.
The century-old tradition is thus proposed in a contemporary key, contributing to one of the greatest changes that have occurred in the world of pizza in recent decades.
Numerous national and international journalistic and television services have covered Gino and his Pizza.
His appearances on television are frequent, as a pizza maker on Masterchef for three editions, a judge for the pizza competition among the judges of Masterchef Israel, Menù di Benedetta, Alice TV, and for five years on the “Pizza” segment of La Prova del Cuoco on Rai 1 and in its monthly magazine. He has also been the protagonist of many documentaries and docufictions about Napoli and Pizza produced and aired worldwide by Discovery, National Geographic, and Arkè.
INNOVATION
With Gino Sorbillo, Neapolitan Pizza arrives for the first time at the Chef Congress Identità Golose in January 2011. His participation continues at Festa a Vico, Le Strade della Mozzarella, Taste, Witaly, Gusto in Scena. Together with his younger brother Toto, Gino has opened six more locations: Lievito Madre al Mare, Lievito Madre al Duomo, Antica Pizza Fritta da Zia Esterina Sorbillo (the latter in three distinct locations in the city and in Milan).
Today, Gino Sorbillo is also the founder of the Casa della Pizza, a place that was born in the historic center of Napoli, just a few steps from the pizzeria, in what was the home of Aunt Esterina, a symbol of Neapolitan Fried Pizza, the first of the 21 children of the Sorbillo family.
The Casa della Pizza, open not only to pizza makers but to all pizza lovers, aims to be a place for comparison, exchange, meetings, and debates on the most famous and beloved Neapolitan dish in the world. This place, already the headquarters of the Academy of Pizza, also hosts numerous works by Neapolitan artists and artisans, in order to promote the various Neapolitan arts even more.
In June 2016, he was awarded by the International School of Italian Cuisine ALMA Master of Arts and Crafts, the only one in the category of Pizza Makers, in the presence of the Minister of Cultural Heritage and President of the Republic Mattarella.
Gino's new frontier is the use of organic farming flours and the continuous updating of his menus given the ongoing and constant search for the best Italian gastronomic excellences to propose on pizza and to make known through pizza.
